A date for your spinach.

A date for your spinach. . Summer calls for cooling foods and quick makes, so you can get it done and get outdoors. This dip is perfect for that! Full credit to my mom for the recipe. Her spinach and dates raita was a staple at our table. Healthy, cooling and delicious... it made the perfect accompaniment to go with parathas and more. . Taking inspiration from her recipe, I’ve tweaked it to make a hearty dip to go with my garam masala naan chips or any flatbread chips of choice. . Making: Mix together julienned shreds of baby spinach, finely cubed pitted dates, Greek yogurt and a pinch of salt. That’s it. Proportions are completely up to you. I go for approx. 2 cups of spinach, 2 cups yogurt, 5-6 dates, all eyeballed. Keep the salt to minimum. Serve with either pita/flatbread chips or my yummy garam masala naan chips - cut naans into quarters (or chip sized), lay on parchment lined baking sheet, brush with ghee (or olive oil), sprinkle salt and garam masala, bake for approx 10 min (400F, preheated). . To make the traditional raita - replace greek yogurt with plain yogurt. . Whichever way you serve it, I can guarantee that this dip/raita will be a plated expression that’s the talk of your table. .
