A lava of love. . Birthdays are so much like a chocolate lava cake! Especially those of your children. Like the lava oozing out, birthdays of your children let out feelings of happiness, pride, love, nostalgia, hopes, wishes and so many emotions! . Every year, all our birthdays are full of celebrations with friends and family, but the focus is always the cake and food. This quarantine period has not changed that focus, except that the celebration was relatively quieter or virtual. So this year, my daughter asked for my “famous” chocolate lava cakes and I readily obliged. . These cakes are nothing less than a bite of heaven and are easiest to make! I literally made the batter and filled the ramekins up in the time my husband made us an exotic cocktail. That easy! The secret - follow the recipe by @myfoodandfamily. Search their website for it. I’ve used this recipe for years now and it’s never failed. I’ve experimented with some tweaks over the years and that’s worked flawlessly too. . Tips from my experimenting: 1. Reduce sugar to 3/4 or half a cup depending on your taste 2. Baking time - set it at 10 mins to start with and go from there as varying oven temps will cook these faster or slower 3. Use the make ahead feature. I prepped these on the eve of my daughter’s birthday and we had a day full of freshly baked lava cakes. 4. The recipe asks you to divide in 4 cups, I suggest go for 6. This way you end up with 6 individual servings that people can actually finish and don’t have to share. .
