A little peppering is good for you.

A little peppering is good for you. . Just like everyone who put up a kitchen garden during the pandemic... we too have had an explosion of produce! Especially the peppers. Jalapeño peppers in abundance. I’ve used them in so many different ways all summer long... and stuffed baked peppers are probably the best! The spicy kick of the jalapeños contrasted by the cooling and creamy texture of cheese... it’s perfect. . So easy to make: Halve the peppers, scoop the seeds out... and bake them at 350F until they are crisp and cooked. Meanwhile, whip up some ricotta cheese. By now, you know that I love my ricotta 😀. Chop up some sun dried tomatoes and fold them into the ricotta along with some Italian spice. I threw in a little bit of shredded cheddar cheese as well. Proportions - totally up to you. Wing it, taste, adjust and repeat. Once the peppers are ready, stuff peppers with cheese mix and serve as is. Or, since yesterday was a little on the colder side, I put the peppers back in the oven for a quick broil - just enough to warm up the cheese. . The stuffed jalapeños with their heat and creamy filling were the perfect accompaniment to a fresh crisp pear and greens salad to make our plated expression last night. . Make it. Share it.
