A merry wish to all - with sorta egg nog pie Ending Christmas Day with an interesting story that has been the spirit of this year. Yesterday the kids and I decided to start the day with making gingerbread cookies. I must have messed up something, because my cookies which usually are soft and chewy, turned out to be hard and blah! So disappointment took over... and those cookies were headed to the trash can! But we couldn’t. We just didn’t have the heart to chuck them. So in the pure spirit of - when life gives you lemons, make lemonade... today those cookies were turned into a fabulous crust for this holiday pie. Crushed the cookies up and added a good amount of melted butter to them until the mix was forming a doughy ball. Pressed the crust down in a 9 inch pie plate. For the custard - mixed up approx 1 cup of mascarpone (you can replace with regular cream cheese) and approx 1/2 cup condensed milk. In 1/2 cup of evaporated milk, bloomed 3 packets of gelatin (approx 3 tbsp). Added 1/2 cup warmed up evaporated milk to the bloomed mix and mixed well. Once all the gelatin lumps were smoothened out, added this to the cheese mix. Stirred in 1 tsp vanilla extract, some ground cloves, ground cinnamon and ground nutmeg. Mixed well and poured the custard over the pie crust. In it went in the refrigerator for a few hours. Decorated it all festive with fig slices, pomegranate seeds, mint leaves and a sprinkle of my orange and rose finishing sugar. It almost has an egg noggy taste and is well paired with the gingerbread crust. Plus taste test passed by happy kids!
