Backyard workday lunches be like… Sriracha spiked shrimp salad sandwiches with a side of kale and strawberry salad. The sun has been playing peekaboo, lunch beckoned and voila… we went al fresco. Sandwiches - my nostalgia of London and @marksandspencer @marksandspencerfoodpr influenced shrimp salad sandwiches are now a family favorite. Chopped cooked shrimp and celery tossed with a dash of low-fat mayo, sriracha, salt and pepper… spread on multigrain and artisan breads. Salad - Kale, strawberries, white onions, hard cheese, pecans tossed together with homemade orange dressing. 4 pairs of hands in the kitchen to put this together in minutes and a short break from work led to a wholesome conversation filled lunch on the deck… oh these are the good summer days!
