Breakfast, tea time or just a snack...

Breakfast, tea time or just a snack... It’s delicious when sabudana vada is in it. 😋 Food carts (literally carts, not trucks) sell these freshly fried vadas at every street corner in Western India and every batch sells out before the next batch comes out. Soak 1 cup sabudana or tapioca pearls or sago in 1 cup of water overnight (at least 6 hours). Drain out any excess water. Mix in 1 or 2 mashed boiled potatoes, approx. 1/2 cup crushed/powdered roasted peanuts, chopped coriander and chopped green chilies, lime juice, cumin seeds and salt (to taste), dash of sugar (optional). Mix and mash well. Grease palms with a little ghee and form discs from the batter. Deep fry in hot oil on high until the vadas are golden brown on both sides. I deep fried these, but my friend @soumyagupta100 made these in the air fryer and they turned out great. Soumya, please share air fryer settings and time in comments if you can. For yogurt sauce, whip up yogurt, add chopped green chilies, coriander, spoonful peanut powder, salt and sugar. Golden crisp on the outside and soft on the inside, this plated expression has been my favorite for as long as I can remember. Make it. Share it.
