Brunch scenes be like... Green moong dal chillas [split green moong lentil crêpes] Swipe left to see what this lentil looks like. . Lentils make a big part of the Indian cuisine. From north to south, this protein packed pea sized thing is consumed in various forms - from soups to fritters to pancakes and more! Of all the things you can make, I have to say chillas or crêpes are probably my favorite. Especially the way I’ve served them here... which is a combination of serving styles of my mom and a cousin, with my own twists and tweaks. . Chilla batter: Soak 2 cups of lentils in water for 6 hours or overnight. Drain after soaked. Grind/blend to make batter, adding little water as needed. Consistency should be that of flowy pancake batter. I add 1 inch ginger root, 2 thai green chilies and 1 tomato to the lentils while grinding, just cause I like the taste. Season batter with salt. Batter can be refrigerated for a couple of days. To make chilla: spread batter on a lightly oiled hot pan, like you would for a crêpe or dosa. Cook till chilla slightly browns on the bottom. Stuffing: Peel and dice boiled potatoes, season with chaat masala. Toppings: 1)Whipped yogurt seasoned with salt and sugar. 2)Tamarind chutney. 3)Green mint chutney. Chutneys, you can go with store bought. Mine are homemade - recipes coming some other day. . Serve warm chillas, stuffed with potatoes and topped with the tricolor toppings whichever way you like. I like to make my plated expression look like a piece of abstract art. . Make it. Share it.
