Chicken Seekh Burgers . I call these chicken seekh burgers because I had mixed meat to go on skewers for the grill, but it rained and when it rains, it always does pour! So... improvised, made patties and baked. Of course by the time we were ready to eat, it was bright and sunny out. C’est la vie! . For patties - to 2 lbs of ground chicken, add paste of 1 shallot or 1/4 small onion, some minced garlic & ginger, salt, red chili powder, cumin powder, coriander powder, a hint of chaat masala, 1 egg and 1/4 cup of breadcrumbs. Form patties, place on lightly greased baking sheet and bake at 375F (preheated) for approx. 20 mins. . Burger up in toasted burger buns with slices of onions, tomatoes, pepper jack cheese and condiments of choice. I personally like sriracha aioli with a hint of hot & sweet ketchup. These also made for a perfect splash of color and pattern on my plate. . For a side, instead of fries, I went with jeera aloo (cumin home fries). Recipe courtesy - @citraa7. She makes the best jeera aloo that tastes especially yummy at Ashtmi celebrations every year. To make - start with spoonful cumin seeds and a cinnamon stick in hot oil, add chopped onion and couple of sliced green chilies. Sauté. Add handful potatoes, chopped. Top off with salt, garam masala, red chili powder and a hint of amchur powder (mango powder). Simmer covered until potatoes cook. . Fun facts & tricks: This turned out to be the perfect improvised meal. Seekh kebabs turned into burgers. Leftover jeera aloo became a yummy side. I didn’t have breadcrumbs in the pantry - so crushed up some crackers and they did the job just fine! Goes to show - a recipe is to guide, it doesn’t have to be followed to the T. Cooking can be fun.
