Crème Anglaise to the rescue.

Crème Anglaise to the rescue. . This delicately flavored cream takes me back to my childhood where fruits & custard was our dessert of choice every summer! Especially when fruits arrived in bulk, my mom would whip up a bowl of custard and all us cousins would sit on the porch steps sharing spooky stories and spoonfuls of heavenly taste. . It wasn’t until later in my 20s that I got introduced to the actual Crème Anglaise. My Swiss roommate first served it at a potluck and I was completely smitten by its airy, flowy, creamy nature. And that aromatic vanilla flavor was just the right hint of custard nostalgia. . Simple make: Heat 2 cups of half & half and scraped vanilla of 1 bean (or 2 tsp essence) in a saucepan just until bubbles line the rim. Meanwhile, whisk 4 egg yolks and 1/4 cup sugar together. Pour heated liquid in a slow stream over yolks mix, constantly whisking. When done, transfer everything back to saucepan, heat on low with a slow whisk until sauce thickens. Move saucepan off the heat and onto a bed of ice in a large pot or pan. Let cool, refrigerate, store upto a week and serve over fruits and desserts, like I used it in the Purple Trifle in my last post. . You can’t deny how easy this is and makes a great topping or accompaniment to many dessert platedexpressions. . Make it. Share it.
