Don’t butter me up. Pudding me!

August 18, 2020

Don’t butter me up. Pudding me! . You know that feeling when your kids leave the bread bag or bread box open and a perfectly good loaf hardens up around the edges? Well, I do! 😀😀 But there’s always a way to make your lemonade... in this case, make your bread pudding. . So this was a first for me with whole grain bread. I’ve almost always made bread pudding with white bread... but I went with the flow and used the whole grain loaf. There was also a box of blueberries that were getting crinkled, so those got put to use as well. . Packing it up: Tear the bread apart in cubes and layer a 9x13 well greased cake pan with the bread. Toss in blueberries and spread evenly with bread. In a bowl whisk together - 2 beaten eggs, 1/2 cup sugar, 3 cups half & half, 1 tsp vanilla extract. Pour half the egg mixture evenly over bread. Using a wooden spoon or fork, press bread down to make sure bread is soaked in egg mix. Add remaining egg mix and repeat. Let sit for 5 minutes. Bake (at 350F, preheated) for approx 30 mins or until the liquid is absorbed, bread is browning around edges and top but is still soft. Optional - sprinkle raw sugar on top and broil for a few minutes till sugar browns. . I actually loved the whole grain bread taste in this plated expression... this one’s going to be made more often from here on. . Make it. Share it. Tag it #platedexpressions .
