Fancy up chicken over rice. I guess I’m on a small plates streak... and in that spirit, here’s a street classic fancied up into a tasting menu or appetizer portion. First, lined up cooked white jasmine rice. Next comes chopped up grilled chicken seasoned with cajun spices. Freshly diced tomatoes lining up after to add some tang and some red to the plate. Lastly, a blend of shredded cheese - Cheddar, Colby and Monterey Jack. I also added a few drops of creamy green sauce on top of the rice - that has cilantro, jalapeños, lime, salt and sour cream all blended together. These plates are small, but there’s nothing small about the flavor that they bring. We relished them just as we would a chicken over rice bowl. A whimsical plated expression for sure. Hope you can take the idea and make it your own. Switch up the ingredients, the symmetry or jazz it further with sauces and seasonings. Whatever suits your taste and palate! Make it. Share it.
