Gobble up cobbler!

October 11, 2020

Gobble up cobbler! . Ending the weekend on a sweet note and I’m plum over this plum and plumcot cobbler. It’s got Fall written all over it. Sweet, tart, warm, cakey, colorful and just decadent all over. Top with a scoop of vanilla ice cream and I can bet every bite will have you dreamy eyed! . Cobblers are meant to be easy to put together. It’s that age old tactic of tossing leftover over ripened fruits with flour and sugar and turning them into something irresistible. . Start by slicing 3-5 plums and plumcots. Note - you can go with any fruit of your choice. Mix with juice of half a lemon and set aside. Next, pour 1/3 cup melted butter in an ovenproof casserole dish or baking pan. On the side mix to form smooth batter - 1 & 1/2 cup of flour, 1/2 to 3/4 cup sugar (adjust as per taste and sweetness of fruit you are using), 2tsp baking powder, and approx. 1 cup half & half. Dollop this batter evenly over the melted butter. Top with fruit slices and bake in preheated oven (350F) for approx. 30 minutes or until the cobbler is soft baked and golden. . A plated expression does not have to be overly complicated to be good. And that’s exactly what this is. . Make it. Share it.
