I’m so green with love! For Palak Paneer.

July 21, 2020

I’m so green with love! For Palak Paneer. . My fond memories of palak paneer are from those festive Diwali days of my childhood when the extended family visited. Every day as we dressed in our Holiday best, there were aromatic preps in the kitchen and palak paneer always did make it in. The soft white clouds of paneer floating in this buttered green curry... mmm, divine! But of course we kids only cared for who got the most green colored paneer of the lot. 😀 . Curry up: Soak 8oz pack of paneer (with cover on) in warm water for an hour. Open, cut paneer in cubes or triangles. Set aside. Blanch 1lb pack of spinach leaves - 2 minutes in boiling water, drain, 2 minutes in ice water, drain. Purée spinach, 1 inch ginger root and a couple of Thai green chilies. Set aside. In a pot, melt 2 tbsp butter, sauté 1 chopped onion & 1 spoon of minced garlic until onion is translucent. Add 1 chopped tomato, sauté. Add spinach purée, pinch of salt and some garam masala, cook to a good boil until masala is well incorporated. Stir in 1/4 cup of cream, chopped paneer, simmer for a few minutes and serve with warm parathas or rotis. . Although a fall/winter treat back then, this green curry is a feast for the eyes and taste buds all year long and always makes for some great green plated expression. . Make it. Share it.
