It’s personal. A personal pie. Pumpkin pie . So a little bit of experimenting done here. A few changes in the future needed, maybe. But hey, what’s life without a little risk, right? Taste was the same. No compromise there. Just that the proportions could be tweaked next time. . Crust lining - Using a jar lid, cut crust rounds to fit in muffin/cupcake tray. Dust tray indents with some flour, fit crust rounds in indents, press crust edges to indent with a fork. Refrigerate for approx 10 mins, so crust comes out flaky when baked. Filling - Beat together 8oz cream cheese and 3/4 cup sugar & 3tbsp flour. Set aside a quarter cup of this mix. To the rest of cream cheese mix, add 1 can pumpkin purée (15oz), 3 eggs, 1 tsp vanilla extract & 2 tsp apple pie spice. Mix well. Spoon this mix into prepared muffin tray, leaving some room on top. Using a teaspoon, spoon small dollops of the set aside cream cheese mix in the center of each pie. Swirl using a toothpick. Bake pies at 375F (preheated) for approx 20-25 mins or until inserted toothpick comes out clean. Let cool, slowly knife out pies. Serve room temp or cooled. Top with a sugar frosted cranberry for color and a tart accompaniment. . What I should have done better: 1. Line crust all the way to the top of muffin indents. 2. Shouldn’t have overfilled the pie filling. This did not leave enough room for cream cheese filling and swirls didn’t come out best. 3. I experimented with muffin trays on a whim. But mini tart trays have worked well in the past. . But as I said... taste of this plated expression is still top notch and an absolute favorite in our home. . Make it. Share it.
