It’s the day you celebrate siblings! Happy Raksha Bandhan to all who celebrate. Ideally, I should be posting a traditional Indian dessert, but given that my dear brother @apallod and my kids love a good chocolate cake, this seems like the apt post for today! . Adapted from @inagarten this chocolate cake, will have you go dreamy eyed! . Cake: Preheat oven to 350°. Butter two 8 inch round pans. Dust the pans with flour. In an electric mixer bowl, mix 1+¾ cup flour, 1+¾ cup sugar, ¾ cup cocoa powder, 2 tsp baking soda, 1 tsp baking powder and 1 tsp salt. In another bowl, whisk 1 cup buttermilk, ½ cup milk, ½ cup oil, 2 eggs and 1 tsp vanilla extract. Slowly add buttermilk mixture to dry ingredients, continue to beat. Finally add ½ cup hot coffee, beat until well mixed. Pour batter into pans and bake for 35 minutes, or until done (toothpick test). Let cakes sit in pan for 10-15 minutes, then cool on wire racks. . Frosting: Melt 6oz semi sweet baking chocolate in microwave, stirring and monitoring. In electric mixer bowl, beat 2 sticks (½ lb) butter until fluffy. Slowly beat approx 2 cups confectioners’ sugar, till mixed and fluffy. Beat in melted chocolate, 1 tsp vanilla extract and ½ cup sour cream (optional but recommended if you like the frosting to have a slight tang). Proportions - adjust sugar and sour cream as per liking and to achieve a thick frostable consistency. . Set up: Lay one cake on platter, frost top, place second cake, frost top and all around. Refrigerate for a little bit, slice, eat! . Happy sibling love to all with this sweet plated expression. . Make it. Share it.
