Mousse-y over, for some pineapple mousse

September 10, 2020

Mousse-y over, for some pineapple mousse . So summer is on its way out... but we still got some heat in the air and the urge to indulge in tropical desserts. This one here is a favorite of mine since I was probably a tween. It’s Mom’s super simple, 5 ingredient, no cook, yummiliciously good mousse! . How simple, you ask?: Mix together 1 pint vanilla ice cream (melted) and 1 cup heavy cream or half & half, if you want to keep it lighter. Set aside. Take a can of pineapple chunks, separate the juice from the pineapple chunks. In a saucepan, heat the juice, add 2 pouches of unflavored gelatin (bloomed) and mix well. Add 1/4 cup of sugar to this mix. You can increase the amount of sugar if you like your desserts sweeter or lessen the amount. Add the juice/gelatin mix to the ice cream mix and fold everything in until well combined. Pour into dessert cups and add a few pineapple chunks to each cup. Set in refrigerator for at least 6 hours. Top off with more pineapple chunks or slices (I just happened to have some handy), garnish with berries and mint and there you have it. . Note: this dessert usually comes out white in color. Unfortunately I haven’t been able to get my hands on unflavored gelatin during these pandemic months and had to replace that with orange Jello when I was making this for a backyard birthday celebration. Thus that light peach-ish color. . This super silky, smooth and delicious tropical plated expression is guaranteed to take you on a memory cruise to tropical islands! . Make it. Share it.
