North meets West! The pav bhaji paratha. . The quintessential breakfast of Northern India, the paratha got stuffed with flavors of the favorite street food of Western India; the pav bhaji! . Parathas or stuffed flat breads are commonly stuffed with a combination of veggies, popularly a spiced mix of mashed potatoes. To move away from the mundane, the parathas here got stuffed with a mix of mashed potatoes and grated cauliflower, the base ingredients of pav bhaji. To get the flavors of pav bhaji, minced ginger root, some salt and pav bhaji masala were added to the stuffing. My favorite brand of masala is #suhanamasala. Next - roll, stuff, roll and pan cook the paratha with some buttery goodness. Peas, also staple to pav bhaji, got separately sautéed and coarsely mashed in butter with just a pinch of salt and little red chili powder. A piping hot paratha with the sautéed peas on top along with a dollop of butter and some mint infused yogurt to dunk and eat... turned out to be absolutely the best amalgamation of flavors and geographies. Yummy! . Fun fact: Although when you think of a paratha, savory comes to mind, but the first parathas dating back to the early medieval times were stuffed with a a sweet mix of jaggery and lentils. That tradition continues in many parts of India under varied names. Mostly made for a special and festive occasion. And as for the pav bhaji, before it became the most popular street food of Mumbai and Pune, it was a means to feed hungry mill workers a quick one plate meal.
