Not your run-of-the-mill babaganoush. This is baingan bharta!

Not your run-of-the-mill babaganoush. This is baingan bharta! . Baingan bharta isn’t a spin off on babaganoush, however has been quite the staple within Indian cuisine. The biggest difference between the two would be that bharta doesn’t have tahini in it. There are multiple ways baingan bharta is made. For this version, I roasted the eggplants until nicely browned and soft. Scooped out the inside, added it to sautéed onions and garlic (which were sautéed in oil with crackled mustard seeds and a couple of green chilies). Cooked it further till eggplant was nice and mashed up. Added some salt to taste and let it cool. Just before serving, added a couple of spoons of yogurt and served it as a dip with mini naans (which I broiled with a dash of garlic powder and some drizzled olive oil). Made for a perfect appetizer on a summer evening on the deck with some close friends and wine and conversations. . . . . #bainganbharta #baingankabharta #notbabaganoush #eggplantdip #eggplant #madeasappetizer #appetizer #indianrecipes #indianfood #indianrecipes #food #foodie #cookingwithatwist #recipe #twisted #goodfood #vegetarian #vegetarianrecipes #foodphotography #platedexpressions #recipes #easyrecipes #easycooking #quickrecipe #simplecooking #simplerecipes #lovetoeat
