Taco me some color! . This was dinner from a couple nights ago... Cajun shrimp, pan roasted corn salsa, fresh radish slices and a drizzle of avocado/mint/cilantro sauce. Cannot get quicker and simpler for a quick wholesome week night dinner. . Times today are borderline depressing, well more than borderline at times. So making meals interesting and colorful is taking even more precedence that before. It’s said that you eat with your eyes first... and I completely believe that. When a colorful pleasant plate is put in front of you... your eyes light up and a smile makes its way to your face. Combine that with a delicious taste and it’s a winner.
