The green comfort - Pesto! . Backdrop: Weathered White [hand painted mixed media on canvas board] Artist: @neha.limaye . We’ve had an explosion of basil in our kitchen garden. I’ve used those lush green leaves in so many different ways - from infused water to caprese to pasta and also on my summer fruit cheese board. And of course jars and jars of pesto! This one here is a creamy pesto made with walnuts and parmesan. . Processing it: 2 cups fresh basil leaves, 2-3 cloves of garlic, 1/4 cup walnuts, 1/4 to 1/2 cup grated parmesan (adjust as per taste), sea salt to taste, 2-3 turns of fresh ground black pepper, juice of 1/2 lemon - all go into a food processor. As you pulse these ingredients, stream in 1/3 to 1/2 cup of extra virgin olive oil. Process till well blended. Mix. Serve right away or jar and store in refrigerator for up to a week. Use over pastas, salads or simply serve with warm bread to dip or to spread on crostini. Here, we ate it with a lightly toasted baguette. Yum! . The comfort of dipping warm bread in freshly made pesto... makes this plated expression a favorite go to. . Make it. Share it.
