The Mango Salsetta

The Mango Salsetta . Mango memories are emotionally close to my heart. As a child, I spent many of my summers at my grandparents’ home away from the city. Farm fresh mangoes were laid in the attic on burlap and covered in hay to ripen. Every morning, my grandfather and I would check through each mango in the hay to find the ready ones... and as we did that, my grandfather would tell me the most amusing stories. This flavorful salsetta (my fusion of salsa/bruschetta) is my platedexpressions tribute to those fun mornings with my grandfather. . This picture is my attempt to recreate a representative scene of those mornings - with burlap and paper grass as the hay, the sweet and savory salsetta itself represents the myriad stories that spanned topics of all genres, while the mango... well, that’s as much a star today as it was on those mornings. . Make: Chop finely and mix - 1 ripe mango, 3 strawberries, 1 thai chili, 1/4 white onion. Add a bunch of julienned fresh basil leaves, a pinch of salt and 1/2 tsp honey. Mix until well combined. Refrigerate. Top on pita chips and serve as an appetizer or snack! . Make it. Share it. Tag it #platedexpressions .
