A(roma)nce... . When the aroma takes over the whole house and it’s nostalgic of a romance... it just can’t get any better! . Street food classic, chicken keema pav takes me back to those dating days when on cold winter evenings our idea of a perfect date was finding soul warming food like this! That was when I was introduced to keema by my now husband. The aroma of that keema slow cooked over an open charcoal flame was heaven in a clay pot. Served with that crispy buttery soft pav(bun), which you dunked into the keema to let all the flavors soak and then in that went in your mouth. That moment was like a symphony of flavors, heat and textures all put together. Oh and you had the love of your life by your side as well. 😊 . To be able to recreate that symphony to a large extent complete with the smokiness of charcoal infusion... that is an accomplishment and may I say, I did it! . The recipe for this couldn’t be any simpler. Sauté chopped onions, minced garlic, minced ginger in bay leaf and red chili infused oil, right in the Instant Pot. Add all the masalas - turmeric, red chili powder, coriander and cumin powders, garam masala, salt, give it another stir, add puréed tomatoes, about half a cup of water and pressure cook on high for 4-5 minutes. After natural release, adjust liquid and salt. . ***Trick for the charcoal infusion: light up a @sunlightcharcoal charcoal tablet in a ramekin, let it burn until nice and hot, extinguish the flame, pour about a quarter teaspoon of ghee on the hot charcoal, put the ramekin with the smoking charcoal atop the keema and cover with lid. Let this stay for about an hour, discard charcoal and enjoy the heavenly taste of charcoal infusion in your keema.
