An afternoon pick me up. . After a day of crazy work, what do you do? You cook/bake/experiment. So my mother-in-law gave me the Aebleskiver pan, aka the appe/paniyaram pan as known in India. It’s been sitting in the kitchen cabinet for a while until recently when a bunch of my high school friends started discussing recipes and I got interested and started looking into the possibilities. That’s also when it hit me that the appe pan is the same as the Aebleskiver pan that my Danish roommate in England made those yummy donuts or cake pops in. So today was my day of experimenting with this versatile pan! . Featuring here - mango centered donuts. I had a mango stuffing ready sitting in the refrigerator. Basically it was a truffles recipe gone wrong. Too soft! So mashed up a couple of donut recipes that I found online - a combination of flour, sugar, sour cream, milk, eggs, butter and went at it. The donuts were made by layering batter, mango stuffing and batter into the indents of the pan and cooking on both sides. I wouldn’t say that I perfected the recipe today... the donuts could be slightly more airy! When I do get to that perfection, I’ll share again. But for a first attempt... this was not bad at all. The fact that they were polished off in a matter of an hour... that’s validation enough! . And can I get some applause on the plating and photography?
