A woot woot for Taro Root.

March 23, 2021

A woot woot for Taro Root. A quick fix, healthy and nutritious snack. This was a staple in my home when growing up. I grew up in an all vegetarian home, with a slight exception. My dad loves his meat and fish, however my mom has never eaten or cooked either. This was her go-to alternate when my dad had a fish craving at home. The texture and taste of Taro is the closest it can get to that of a fish. And the health benefits were an added plus! To make: Steam taro with skin on in Instant Pot. 8 mins on steam setting, followed by quick release. Peel the skin off the root, cut the taro in halves. Press each half lightly in between your palms to slightly flatten. Be gentle. On a lightly greased pan, shallow fry the flattened taro until they are lightly golden browned on both sides. Take off pan and let sit on a paper towel for a minute. Season with a sprinkling of salt and paprika. Serve with any condiment of your choice or just as is. A side of chilled beer goes very well... but that’s going to be plenty calories, so choose wisely. 😉 I reminisced my childhood family evenings with these plated expressions as I savored them with my husband and kids. That surely was a feeling to cherish. Make it. Share it.
