Idli/dosa waffles

Idli/dosa waffles Happy Saturday Brunch to all you foodies out there. It’s been a little longer than usual since I posted here. Just got caught up with life. But here I am again... so a big hi to all. Most all Indian kitchens, especially kitchens of those that hail from the South of India... having leftover idli or dosa batter isn’t an unusual thing. This fermented batter of overnight soaked rice and lentils is not an unusual sight. And that leads to using the batter up in creative ways. These waffles are exactly that. I had dosa batter left over... which is almost the exact consistency of pancake batter. I added some chopped - onions, tomatoes, green chilies, coriander to it. Seasoned it with some paprika, salt and cumin seeds. In went the batter in a lightly greased waffle iron for a few minutes and voila... dosa waffles were ready! The crispy outside and the soft inside of these platedexpressions dunked into coconut chutney... that’s a bite of heaven! Make it. Share it.
