Bowl for the soul

May 19, 2020

Bowl for the soul . If anything, this quarantine has definitely helped us master the art of pantry and refrigerator management. I wouldn’t say I was bad at it before... but it’s definitely helped hone the skill further. For me planning meals ahead of time or following a recipe to the dot is a chore! I’m one of those who opens the refrigerator door, stands in front of it staring into the light until a light bulb inside me goes on! However, quarantine has taught me and us all to work within the available resources. No last minute quick trip to the store to pick up one missing ingredient, no plethora of choices and no “eh, let that sit there, I can use it another day”. It’s almost like - you take what you get and you don’t get upset. . This soup was a result of a combination of all of the above. Husband brought home a big block of Gouda that isn’t the kind that goes well on a cheese platter. There was a box of spinach that if not used soon would wilt off and a couple lone carrots who had gotten fairly comfortable in their spot in the vegetable drawer. That’s all good, but we had a craving for good old potato soup! So what does one do??? You improvise and get creative to present your family with something we called - A pot(at)you soup! . How it all transpired - sautéed chopped onions and minced garlic in some butter in the Instant Pot. In went diced potatoes, chopped spinach and grated carrots. Some sea salt and cracked black pepper, just enough water to get the veggies cooked... and the pot was shut and pressure cooked for 7 minutes. Once cooked, I ran a couple rounds of the masher through the veggies to get the potatoes chunky mashed, added some milk, grated up a little Gouda right into the pot, stirred, simmered and served topped with scallions! That hit the spot for sure. We got our potato soup, the refrigerator ingredients didn’t make their way to the garbage and I was designated best mom ever once again. . #soup #soupforthesoul #souprecipe #potatosoup #vegetarian #vegetarianrecipes #platedexpressions #quarantinelife #quarantinecooking #covidcooking #stayhome #stayhomestaysafe #cookingathome #freshlymade #instantpotrecipes #ministryofcurry #pipingpotcurry
