Beet that heat this Father’s Day!
June 20, 2021
Beet that heat this Father’s Day! Nothing says cooling freshness more than a medley of colors combined with flavors of these beets and goat cheese crostinis. And especially when it’s Father’s Day... this plate adds a wonderful vibrancy to the table. The making: Peel and steam 2 medium sized beets. I steamed them in Instant Pot for 12 minutes, followed by quick release. But, stove top steaming works well too. Steam to a firm softness. Chop the steamed beets finely and refrigerate. To one cup of whipped goat cheese, add a tablespoon of Dijon mustard, a teaspoon of olive oil and freshly squeezed juice of half an orange. Mix until well combined. Slice up a baguette into squares. Toast them lightly. Spread a generous portion of goat cheese on each square. Next, add the chopped beets and top with mustard microgreens or watercress. And done! Plate and present. The best thing about this plated expression is that it’s pleasing to the eyes and packs a punch of flavors into every bite. From sweet to tangy, from cooling to spicy and from mmmm to yummm! Make it.
