Gulpable-pani-puri

Gulpable-pani-puri . As promised in my previous post, here is what I would call the queen of all street foods out there. Pani puri or gol gappe, the name changes as you travel through India, but guaranteed that these bite sized rounds are hands down an explosion of flavors in your mouth! . Puris (the puffy rounds): These are made from a semolina dough and deep fried crisp. I made these at home for the first time during the pandemic... but it’s a process and I would recommend going with store bought from your local Indian grocery store. . Tamarind chutney: Thanks to my mom and homegrown tamarind from our farms in India, I’ve always had jars of this in my refrigerator. Her recipe: soak equal amounts of peeled & deseeded tamarind and jaggery overnight. Pulp soaked mix to smooth consistency. Boil, add red chili powder, cumin powder and Himalayan black salt to taste. Run through a sieve and refrigerate (can be stored for months as long as no water is added). I dilute portions of it with water as required (to smoothie like consistency). Alternatively, go with store bought chutney if you don’t want to go through the hassle of making. . Mint water: This has to be freshly homemade. It is the most important part. Blend together to a smooth pulp - 2-3 cups of fresh mint leaves (I used fresh leaves from my herb garden), 5-7 thai green chilies, 1 inch ginger root, juice of 1 lime, Himalayan black salt to taste and 1 cup water. Adjust salt, water to taste (should be watery consistency). Chill. . Stuffing: Diced boiled potatoes mixed with sautéed green moong (presoaked for 6 hours), seasoned with chaat masala. . Eat: Crack a hole in puri, add stuffing, mint water, tamarind chutney, pop in your mouth. Savor. Repeat. Indulge. Enjoy these classic plated expressions! . Make it. Share it.
