Happy National Chocolate Chip Cookie Day! . Recipe: Slightly tweaked version of Barefoot Contessa’s Chocolate Chunk Cookie by @inagarten . I’m not huge about national days, but hey who can resist one for chocolate chip cookies? The ooey, gooey, goodness of a good chip cookie has got to melt you enough to give in. And this one’s just the one! . Dough it: In an electric mixer bowl, cream 2 sticks (½ lb) butter (room temp), 1 cup light brown sugar, ½ cup granulated sugar until fluffy. Add 2 tsp vanilla extract, 2 room temp eggs (one at a time) and mix well. Sift together - 2 cups all-purpose flour, 1 tsp baking soda, pinch of salt and add to butter mixture with the mixer on low speed, mix until combined. Fold in chocolate chips. Using an ice cream scoop, drop scoops of dough on a baking sheet lined with parchment paper. Dough rounds should be approx 1&½ inch in diameter. Shape the dough with damp fingers if needed. Bake for exactly 15 minutes at 350F (preheated). Remove from oven and let cool slightly on pan, transfer to a wire rack, cool completely. Indulge!!! .
