That monsoon mood! . Pav bhaji - another quintessential street food from India. Don’t know why, but the after storm calm and drizzle is making me crave this spiced up delight. This picture is from a few weeks ago. I currently have no kitchen to cook in... well, temporarily. The storm hit us bad and we’ve been out of power and water for a few days now... so living a nomad life until power gets restored. But in the meantime, I can dream and drool. . Smash it: Pav Bhaji literally translates to Bread & Curry/Vegetables. The bread is a slightly denser and less sweeter version of a bun. The ones in this frame are homemade, but I’d recommend going with store bought (easier) - available in any Indian grocery store or you can substitute with sourdough rolls. Those taste good as well. For the bhaji - Boil till mashable soft: 4-5 large potatoes (peeled), 1 head of cauliflower, 2 green bell peppers, 2 cups green peas. You can do this stove top, instant pot or in the microwave. When done, drain any water out and mash the veggies up. In a large deep pan, sauté 2-3 chopped onions in butter, add 2 tsp minced ginger root, 1-2 tsp red chili powder, sauté, add 2-3 diced tomatoes, 1-2 tsp salt, sauté and mix. Add the mashed veggies, 2-4 tbsp of pav bhaji masala (Suhana brand recommended). Mash everything together in the pan on medium heat. Add 1-2 cups of water and a blob of butter. Boil. Adjust masala, water, salt as required. Mash until well combined. Serve hot, topped with butter and chopped onions (seasoned with salt, red chili powder and lemon). Garnish with chopped cilantro and accompany bhaji with pan toasted pav, lathered with butter. . This plated expression is guaranteed to clear your sinuses out! . Make it. Share it.
