Hope you had a chill(e) lime weekend!

August 2, 2020

Hope you had a chill(e) lime weekend! . We surely did with this chile lime corn dip and some chips. . Summer produce is slowly going to start getting scarce, so making the most of it. Especially corn! Oh how we love our corn... any which way we can have it. I had taken this dip to a backyard birthday a few days ago and it got a lot of love. I got asked for the recipe and I’m glad I texted it to a couple of friends... this way I had it written down. Side effects of winging a recipe... if you don’t write it down then and there, it can become a problem! . Corn you make it: Grill corn on the cob rubbed with @traderjoes Chile Lime seasoning (swipe to see seasoning) and a dash of garlic powder. Take kernels off the cob. Add diced sweet peppers, chopped onion, chopped mint, sour cream, salt (if needed) and refrigerate. Proportions - there is no right or wrong, go with as you like. Top with a sprinkle of Chile Lime seasoning and some mint leaves and serve with corn chips. . This summery plated expression is the perfect of sweet, spicy and tangy all at once! . Make it. Share it.
