I’m pineapple pudding over you.

I’m pineapple pudding over you. Mother’s Day month continues and the official start of summer is here as well. So what can be better than this cooling, pleasing and delectable pineapple pudding. This is my mom’s recipe. I’ve grown up on this. It’s the first dessert that I made for my husband and friends. And I have a feeling that my clumsy in the kitchen daughter will carry it forward as well. So easy - In a mixing bowl, mix together 1 tub of melted vanilla ice cream and 2 cups of heavy whipping cream (half and half works, if you want to go lighter). Set aside. Open up 2 medium sized cans of pineapple tit bits. Separate fruit from the juice. In half a can of juice, bloom 4 packets of unflavored gelatin (.25 oz each). Heat the other half can of juice. Stir bloomed gelatin in the hot juice until gelatin is completely melted. Add the remaining 1 can of juice to this mixture and let it sit to cool, stirring it every now and then. Meanwhile, chop the pineapple finely. Once the juice mix is cooled down, add it to the ice cream mix. Blend well. Pour into a casserole dish or individual cups. Top with pineapple pieces. Some will sink, some will stay on top. Set in refrigerator for approx 4-6 hours. Top with additional pineapple slices or cherries or even nuts. Serve up and enjoy the silky smooth pudding. Make this for your Memorial Day bbq, I guarantee you that this plated expression will be the showstopper of your table. Make it. Share it.
