Ice icy kulfi!

July 2, 2020

Ice icy kulfi! . 4th of July, summer, sun & sand - how can you not think of frozen desserts? Popsicles, sno-cones, ice creams, just the thought of these make you smile! . Continuing with my Red, White and Blue theme this week, here’s another white for ya - the classic malai kulfi. Deep rooted in the history of India, Persia, and other Asian regions, this popsicle is an amalgamation of milk in different forms. It made perfect sense to make this as my tribute to the White in the flag as its representative of what the US is. An amalgamation of cultures migrated. We are different but combined. And if we choose, we can represent unity amidst our differences! . The traditional way of making kulfi can be time consuming. However, there’s a quick fix. I got this recipe about 20 years ago from my childhood friend, who’s like my older sister - @sonali_bafnanair. And ever since, it’s a favorite amongst family and friends. . Making: Heat in a pot on low/med heat until bubbles line the rim - 1 cup heavy cream, 1 can condensed milk, 1 can evaporated milk. Add 2 tsp doodh masala (spiced milk powder) and a few strands of saffron. Mix well. Pour in popsicle molds. Set in freezer for at least 8 hours. Run warm water over molds to loosen up. Pull kulfi out and serve. Recipe yields approx 16 medium sized kulfis. . Notes: 1) Skinny version - go with light cream. 2) Fruit kulfi - add 1 cup fruit pulp. 3) Don’t have doodh masala - dry grind to a powder: a couple of cardamom seeds, cloves, cashews, almonds, pistachios and pinch of nutmeg zest. . This is the slurpiest of all platedexpressions’ desserts. . Make it. Share it.
