Now beet this pink! πππ . Continuing with some beet makes here... and by now youβve probably figured out that I love my toasts and crostinis. So hereβs one to put a little pink spring in your heart and take you on a flavorful journey. . I have been instructed to announce - that the crostinis on the left were not only made by my daughter but were also her idea. So there you have it. ππ . So how do you make that pink stuff, you ask? Pre-boil a beetroot. Run through a blender - half a beet with one Thai green chili pepper. Stir this mix in with 1/2 cup whipped ricotta cheese (adjust ricotta as per taste and color). Add salt to taste. Spread the beet & ricotta mix on toasted multigrain bread or crostinis. Top with sliced radishes. I usually sprinkle radish slices with salt and lemon juice and let them sit for a few minutes. This lowers the pungent flavor of the radish and adds a nice tangy flavor. Garnish toasts with chopped cilantro and done. . Go color the town pink with these fabulous plated expressions. . Make it. Share it.
