Oh so corny!

Oh so corny! . Summer and corn. Corn and summer. Don’t they just go together? On the cob or off, you just can’t go wrong with these yellow and white pearls. . Featuring a little bit of fusion here. A fusion of corn chaat/bhel as a salsa with chips. If you know the Indian culture, you have to know that chaat plays a big part in our life. Chaat for those who don’t know is this spicy and sweet form of food or cuisine that’s integral to the northern part of India and corn chaat or corn bhel was my favorite growing up and still is. . Corn chaat: Corn kernels (raw or roasted) get mixed with chopped - white onion, tomato, thai green chili, cilantro and mint leaves. Seasoned with some lemon juice, salt and roasted cumin powder (or chaat masala if you want to go all out). In the traditional way, this would get served over paapdi - fried flat bread chips. Here, I served it with round corn tortilla chips in a chip and salsa form for the family. Salad: for me, I turned into salad - served atop a bed of arugula and drizzled with a cooling green dressing made from mint, dates, yogurt, thai green chili, salt and lime - all run through a blender. . The fusioned salsa was a welcome change for the family and as for my salad - the creamy dressing with spicy sweet corn chaat and the peppery crunch of arugula - no less than a symphony in your mouth! . This dual summery sweet corn plated expression is my contribution to the #eatyourvegetablescollab featuring “Corn” hosted by @sproutsandkrauts . Make it. Share it.
