Paneerini - the paneer panini . This weather called for some comfort food. Rain, shine, rain, rain, no shine... ugh! So to brighten up spirits, we found our comfort zone. These paneer paninis are a quick fix twist on the drool worthy paneer parathas, which of course is a whole different nostalgia story. Any way, my version of this quick fix recipe: chopped up paneer, chopped onions, green chilies, cilantro, salt, dash of Garam Masala and lime juice. Mix well. Get your good local bread, sandwich with the mix and panini away! Now just for some tomato soup... that would hit the spot. . Oh.. and by now you if you don’t know what paneer is, I feel sorry for you.
