Warming up on a cold night be like... Spiced cranberry bread pudding with a warm fig butter glaze! (All of bundt style) . ‘Tis the season to bundt up. ‘Tis the season to subtly spice your desserts. ‘Tis the season to warm and cozy with loved ones and bread pudding. 😀😀 . I recently succumbed to the Air Fryer cult. I know, it’s old news... but I got there, right?! Any how, mine’s the one that is a toaster oven/convection/fryer combo and I’m happy with the possibilities it brings along. Thanks to a bunch of friends for their recommendations and the nudging they did. . Had some going stale cranberry bread sitting around... so pudding came along. Tore up bread into bits (approx 2-3 cups) and dumped them in a butter greased 8” fluted cake pan. In a pot, heated up 1/4 cup butter, 1/4 cup dark brown sugar, a dash of apple pie spice and 2 & 1/2 cups of half & half. Poured this and 2 well beaten eggs over the bread. Pressed down with a fork till the bread soaked in the mix and baked at 350F (preheated) on convection setting for approx 15 minutes (till knife came out clean). For the glaze - heated up 1/4 cup butter, 2-3 tbsp of light brown sugar, 1 tbsp of @traderjoes fig butter and 1/4 cup of heavy cream on low flame until well combined and the glaze started to thicken a little. .
