Welcome to my lunch club Broccoli cheddar soup & Mex naan pizza . What a day this has been so far. A win for Democracy all the way! I’m not loyal to either the Left or the Right, but I do believe in leadership that listens, respects and unites. . The morning was full of rushes, but this afternoon was all about time with a book (perfect for the times and gifted by a dear friend @citraa7) and an easy to eat lunch (also easy to make). . Stove top BC soup: In a pot, sauté 1 diced onion, 1 tbsp minced garlic in butter till cooked. Add 1 tbsp all purpose flour and salt to taste. Sauté till flour cooks to form a roux. Add 1/2 cup half & half, 2 medium broccoli heads (chopped or torn), 1 carrot (peeled and grated). Mix well. Add 2 cups milk, 3/4 cup (or more) grated cheddar, crushed black pepper. Cover and cook until veggies are cooked. Adjust milk qty as per preferred consistency. Boil. Serve hot. Mex naan pizza: I know sounds weird, but trust me on it. On personal size naans, spread taco sauce, shredded mexican blend cheeses, toppings of your choice (peppers, onions, tomatoes, cajun chicken, etc.). Bake at 400F(preheated) for approx. 15-20 minutes or until naan is crisp. Serve. Take a bite! . This plated expression was one satisfying lunch! .
